WEST BEND, Wis. - As more travelers show an interest in local cuisines, a Milwaukee chef is taking the trend a bit further with a cooking school that travels to the food's origins.

The Braise Culinary School holds classes on farms and in forests during warm months. Most classes start with a farm tour — or recently, a walk in the woods — so students can see how food grows before they learn to prepare it.

"The idea, basically, is to reconnect people to their food," chef and owner David Swanson said.

He came up with the idea while working on a business plan for a restaurant and attached cooking school.

"One question that I would think that would come up is: 'Where is this food coming from?'" Swanson said. From there, it was a short jump to offering classes — sometimes literally — in the field.

Swanson, 39, worked in restaurants in the Chicago area and Milwaukee for about 20 years before opening the cooking school in 2006. Since then, he has cooked in apple orchards, wheat fields and breweries. This year's first class began with a mushroom hunt in woods near the University of Wisconsin-Washington County.

Swanson partnered on the class with Britt Bunyard, a mycologist and editor of Fungi magazine. Bunyard led about two dozen people through woods and clearings he had scouted the day before.

"There's no need to run from spot to spot," Bunyard said: Dozens of morels were waiting to be picked.

Gail Groenwoldt, 39, of Milwaukee, signed up for the hunt after seeing morels priced at nearly $50 a pound in her grocery store. During the hunt, she also spotted ramps. A side order of the onion-like plant cost her more than $20 in a Milwaukee restaurant.

"This is why we should learn to forage," Groenwoldt said.

After the hunt, Swanson sauteed morels, ramps, asparagus and potatoes and then added veal stock to make a vegetable ragout. The cooking lesson, Groenwoldt said, was "a treat."

Sara Wong, 33, also from Milwaukee, has taken Indian, sushi and Thai cooking classes. On a trip to Vietnam, she ate dog.

CANNES, France - For more than 60 years this sunny town on the Mediterranean in the south of France has lured glamorous stars of cinema to its annual film festival.

But it has a history dating back to 2nd Century B.C. as a fishing village and later a trade center. The British, French and Spanish have waged war to control it. Today it is a tourist town on the famed French Riviera.

It is a great, but expensive, weekend getaway of sun and sightseeing and the ideal place from which to embark on a tour of the Provence region, famous for its food and wine.

If you're luck you may run into an outdoor arts and crafts fair with everything on sale from paintings, jewelry and glassware to local foods and antique woodworking tools. At the top of a hill overlooking the bay is an ancient monastery that provides a glimpse into Cannes' history.

Leaving the hilltop history, walk to the Cannes harbor pier, where for 11 Euro ($15) for adults (5.50 euro for children) you can board a ferry for a 15-minute ride past million dollar yachts to the island of Saint Marguerite.

On the island is old Fort Royal, again overlooking the bay. For a time, the infamous Man in the Iron Mask was imprisoned on Sainte Marguerite, but now its many footpaths, open glades and beaches are used for daytrips by locals and tourists.

1:00: Stop for a lunch of pizza, salad and a small bottle of rose wine at one of the two cafes. Or like many of the locals pack your own lunch and enjoy a picnic and take in the sun on the beach or craggy rocks. Stroll around the island and stop under shady pine trees to rest, relax and even take a nap.

DALLAS - Southwest Airlines Co., which has bashed competitors for charging fees, said Friday it will add new fees for passengers who bring small pets onboard and for unaccompanied minors.

It will also raise the charge for checking a third piece of luggage or an overweight bag.

Other airlines have raised hundreds of millions of dollars since last year with new fees that include charges for checking one or two pieces of luggage and talking to reservations agents on the phone.

Southwest fired back by spending heavily on television commercials that blasted other airlines for charging "hidden fees." Southwest officials said they were winning customers turned off by the new bag fees.

On Friday, Southwest officials defended their own new fees, which Chief Executive Gary Kelly called "just the starting point" for more changes later this year.

"It is always our goal to be upfront with our customers and to set the right customer expectations," Kelly said. "Our changes today associate a charge for items that are truly an extra service."

Southwest has lost money the last three quarters, and it has joined all other airlines in searching for new revenue, a job made more difficult by a downturn in travel during the recession.

Southwest already charges for checking three or more pieces of luggage and for cocktails, and it is testing onboard Internet access for a fee. Kelly hinted last month that new fees were coming, while insisting they wouldn't be "hidden," by which he seemed to mean fees on first and second checked bags.

"It's disingenuous on our part to say that there are no, quote, fees," Kelly said last month. "We just try to be as honest and straightforward and have the right expectation with our customers on fees as we can."

LONDON - Defiantly low-tech yet accurate to the second, Big Ben is having its 150th birthday Sunday, its Victorian chimes carrying the sound of Britain into the 21st century.

It's a birthday the world can share in. The peals of London's favorite clock are carried globally by BBC radio, and its 315-foot tower, roughly 16 stories, is the city's most famous landmark.

But getting inside and seeing Big Ben, the sonorous main bell that gives its name to the whole contraption, isn't easy. Security measures mean few are granted admission, and there's no elevator, so those who are escorted in must climb 334 winding limestone stairs.

Catherine Moss, who took journalists on a pre-anniversary tour, said that in one year as a Big Ben guide, she had climbed the height of Everest three times over.

"It's my own private step machine," the trim-looking 51-year-old called down from the top of the tower.

No special events are planned, aside from an exhibition opening Sept. 19 in the nearby parliamentary offices.

Although the tan-colored tower above the Houses of Parliament is covered in a riot of gilt crowns, sculpted masonry and coats of arms, the interior looks functional. The 14 foot-long minute hand casts a faint shadow over the pale white glass of the dial. The 5.6 ton clock mechanism, like a giant wristwatch, is wound three times a week. In the age of atomic clocks, its near-perfect time is regulated by heavy old pennies laid on or removed from the pendulum.

The chimes, supposedly based on four notes from Handel's "Messiah," ring out every quarter hour from the intricately ornamented belfry. The bongs of Big Ben itself are heard every hour.

Silence at nine
It is rare — and a matter of citywide consternation — for the clock to go mute. But wars and accidents happen. Initial construction was one disaster after another, and in 1916 the chimes were stopped for two years lest they guide German bomber zeppelins to the parliament building.

Carried on BBC radio since 1924, the chimes took on added significance in World War II. Every night Britons observed a minute's silence as the clock struck nine. It was called the Big Ben Minute. Even as German bombs fell and air raid sirens howled, Big Ben's voice was heard.

The solemn chimes were a metaphor for Britons unflappable under fire, says Tam Dalyell, 76, a former lawmaker.

"It's defiant," Dalyell said in a telephone interview from his home in Scotland. "It's a sign of confidence and undaunted spirit."

On the night of May 10, 1941, an air raid wrecked the parliament building, sending up flames as high as the belfry. A small explosive shattered the clock's south dial and damaged stonework, but the clock didn't skip a second.

Its durability was "as great a boost to the morale of the British people as the speeches of Winston Churchill," according to Peter MacDonald, the author of "Big Ben: The Bell, the Clock and the Tower."

Moss, the tour guide, said she sees it in the faces of Blitz survivors who visit the tower.

Pods of dolphins, sea lions basking on the stony shore; bright orange garibaldi and colonies of starfish inside half-submerged caves that can only be reached by kayak. The only thing missing are the Chumash Indians who lived here until well into the Spanish period.

Secluded, exotic, remote islands ... in the U.S.? You may not realize it, but America is full of gorgeous islands, some of them reachable only by plane or boat and others surprisingly close at hand. Some have never been settled and others support thriving little communities. But all are places where you can chill out for a long weekend or maybe even the rest of your life.

Like Santa Cruz, some islands are nature havens. The ancient boreal forest on Michigan’s Isle Royale supports the sort of creatures that once roamed the entire Great Lakes region—moose, beaver, lynx and wolves. Hiking trails and water routes link primitive campgrounds that seem more like the Yukon then somewhere within a few hundred miles of Chicago.

After the Civil War, they lived in seclusion for more than a century, blending African and American customs into a unique “Geechee” culture that still exists. Even today, the people of Sapelo live largely off the natural bounty of the island and surrounding waterways, allowing them to remain totally off the radar.

The document clock is ticking.

Come June 1, you’re going to need a passport (or other government-approved document) to enter the United States, regardless of where you’re coming from, where you call home or what mode of transportation you’re using.

Unless, that is, you don’t.

Between little-publicized loopholes and last-minute legislative efforts, the new rules not only include exceptions but are also part of a process that’s seen more flip-flops than a shift lead in a sandal factory. And at the risk of belaboring the analogy, there’s still time for another shoe to drop.

The bottom line is that determining what ID to carry the next time you cross the border is not unlike shopping for shoes: one size clearly doesn’t fit all.

WHTI: Five years and counting
It’s been a long, tortuous path since the Western Hemisphere Travel Initiative (WHTI) was unveiled back in 2004. As part of the proposal, a birth certificate and driver’s license would no longer be considered valid ID for travelers (including U.S. citizens) returning from Canada, Mexico, Bermuda or the Caribbean. Instead, a passport or other “WHTI-compliant” document would be required.

In the years since, the regulations have spawned angry debates, much confusion and a series of deadlines and delays that have exacerbated both. It all came to a head in 2007 when the Passport Office found itself swamped with applications in advance of the then-pending January 2008 deadline. Amid horror stories of months-long delays and missed vacations, Congress voided that deadline and set the current date of June 1, 2009.

That deadline once appeared to be in question. In March, Rep. Louise Slaughter (D-N.Y.) stated that although she supports the initiative’s intent, she doesn’t believe the necessary infrastructure is in place to implement it successfully. Raising concerns about chaos at the border and a further decline in cross-border tourism and commerce, she’s planning to introduce legislation that will postpone the impending deadline until June 1, 2010.

HOUSTON - Continental Airlines Inc. is suing nine pilots that it says got sham divorces so their ex-spouses could collect their retirement benefits while they kept flying.

The airline said the pilots concealed the divorces from children and friends, then remarried their spouses after getting the money.

The company said it paid out between $10 million and $11 million in suspicious pension distributions.

Eight of the pilots have been fired or quit, while one was rehired after he promised to pay back the retirement money, the airline said — although he too was named as a defendant after failing to repay. The spouses were also named as defendants.

The airline and the committee that runs its pilots' retirement plan filed the lawsuit Wednesday in federal district court in Houston.

Continental asked the court to order the pilots to return the money and to declare that the company was not violating anti-discrimination laws in firing the pilots.

Continental charged that the pilots — seven men and two women — tried to take advantage of a loophole in a major federal pension law that in cases of divorce allows payment of benefits before the worker retires.

The pilots divorced and then usually assigned all their benefits to their ex-spouses, who then got state courts to issue orders transferring pension benefits in a lump sum to the ex-spouses, the airline charged.

"The divorces ... were subterfuges or sham transactions" because the couples had no intention of breaking up but divorced only to collect pension benefits without the pilots retiring, the airline said.

The lawsuit suggested that the pilots acted because they were afraid of being hurt by turmoil in the airline industry.

Several airlines have terminated pension plans and turned them over to the federal Pension Benefit Guaranty Corp., and the Continental pilots might have feared the same thing could happen at the Houston-based carrier.

The average Continental pilot qualifies for up to $900,000 in a lump sum upon retirement, but the PBGC limits payments far below that level, and it makes annual payments rather than lump-sum distributions.

Continental said it began receiving "a significant number" of requests for lump-sum pension payouts to ex-spouses of working pilots beginning in late 2005, and by mid-2007 the airline learned that the couples usually remarried after getting the money.

Other pilots besides the nine named in the lawsuit apparently tried the same ploy, according to the lawsuit. In some cases, the company stopped payments before they were made.

Over the past two years, the EU has approached airlines and specialized Web sites to tackle "the plague of hidden charges, pre-ticked boxes and nasty surprises in the small print of airline Web sites," Kuneva said.

The majority of Memorial Day travelers, 83 percent, will travel by car, while 7 percent will travel by air, and 10 percent will travel by other modes of transportation including rail, buses and watercraft.

Trips by automobile will increase 2.7 percent, from 26.3 million travelers last year, to 27 million this year as Americans take advantage of gasoline prices that are down nearly 40 percent from year-ago levels.

LAS VEGAS - The iconic "Welcome to Fabulous Las Vegas" sign is now officially a piece of national history.

Clark County officials on Thursday announced that the sign has gained listing on the National Register of Historic Places, to fit with the county's centennial celebration this year.

County Commission Chairman Rory Reid says the 50-year-old sign at the south end of the Las Vegas Strip is an important symbol, as well as the backdrop for untold thousands of tourist photographs.

The National Park Service designation became official on May 1.

The sign cost $4,000 in 1959 and was designed by Betty Whitehead Willis of Western Neon.

It was erected after a group of Strip hotel owners asked Clark County for a sign welcoming visitors to Las Vegas.

WASHINGTON - Foreign travel to the United States is forecast to fall 8 percent in 2009, the U.S. Commerce Department said Wednesday, as the Senate voted to create a new travel promotion program.

Total visits to the United States from Canada, Mexico and overseas countries grew 3.7 percent in 2008 to 58 million, despite troubles in the U.S. housing market that spread economic turmoil worldwide.

The forecast prepared for the Commerce Department by IHS Global Insight Inc expects foreign travel to the United States to rebound 3 percent in 2010 and then increase 5 percent annually to a record 64 million visitors in 2013.

"The numbers are a reminder that while the current global economic climate is difficult, more business sectors, like travel and tourism, are seeing glimmers of hope on the horizon," U.S. Commerce Secretary Gary Locke said in a statement.

Meanwhile, the Senate voted unanimously on Wednesday to approve a bill to create an independent, nonprofit corporation to run a new travel promotion campaign.

Senator Bryon Dorgan, one of the bill's sponsors, said in a statement the program would be funded by a small fee paid by foreign travelers visiting the United States and matching contributions from the travel industry.

The House of Representatives would also have to pass the legislation for it to become law.
